Here is everything you need

  • 70g polenta traditional
  • 2 tablespoon nutritional yeast
  • 2 tablespoon garlic seasoning
  • Sea salt and pepper, to taste
  • 4 slices avocado, lightly mashed
  • 4 eggs

How to put it together

  1. Bring 350ml of water to the boil and add polenta, constantly stiring so no lumps occur. When thickened, let cool on a large flat dish and cut to size.
  2. Place nutritional yeast, seasoning and salt and pepper in a shallow dish. Coat each side of polenta with cooking spray and dip into seasonings on both sides.
  3. Heat a small pan over medium heat. Coat with cooking spray and add polenta. Cook two minutes per side, then plate. Lay avocado on top.
  4. Bring a small-medium pot of water to a boil. Crack one egg into a bowl, then carefully slide it into the boiling water. Repeat with the second egg. Poach for 3 minutes and remove with a slotted spoon.
  5. Lay egg over avocado, and serve. Top with any extra coating, fresh chives or additional nutritional yeast, if desired.

Polenta contains both protein and fiber to help a person feel full. I would have this meal earlier in the day to help slowly refill your energy across the day and keep you from craving bad foods.
